Classic recipes (Our son Chris' favorite's)

Caramel Sauce

2 cups sugar

1/4 cup water 

1/2 cup heavy cream

1 tbsp. butter

2 tbsp. light corn syrup

In a heavy bottomed sauce-pan, place the sugar and water. On low heat melt the sugar, and then raise heat and continue to boil, until the mixture becomes a light amber. Remove from heat, stir in butter and heavy cream, (it will bubble up once you add the heavy cream) stir briskly. If it looks like you need to place it back on the heat to help bring the sauce together do so.

Yield about 2 cups
