Summer cole slaw

1/2 head of cabbage shredded

1/2 head of red cabbage shredded

2 medium onions sliced thinly

1 green pepper diced

2 carrots diced

2 cukes sliced thinly

 

Dressing:

1/2 cup veggie oil

3/4 cup sugar 

3/4 cup vinegar (white)

Have all the veggies in a large bowl.  Mix the dressing, and pour it over the veggies, cover bowl with plastic wrap and set it in the refrigerator over night.  In the morning stir the salad, and recover, and let it sit for another day.  Once the salad has marinated for about 2 days it is ready to be enjoyed, just remember the stir it well, making sure you grab the veggies from the bottom of bowl and lift them up and over the mixture, making sure all the veggies come in contact with the marinade.
