Kosher salt verses finishing salts
I get this question alot, what is the difference between Kosher salt, regular table salt, and finishing salts.
Salt is salt right? Well, kinda yes and kinda no. Hear me out. Kosher salt si well, lighter, flakier, and basically has a wider width (when looking at a flake) than regular salt. In addition it has a milder taste as well.
Its easier to srpinkle over your dishes, I like to refer to it as the work horse in my its-your-kitchen.
Table salt is very uniform in it’s size, has non caking agents in it, and has iodine as well. Lends more of a saltier taste as well.
So in a nut shell; don’t sub one for the other in a recipe. You might find your end product is either too salty or too bland.
In my ktichen, at its-your-kitchen I use table salt for baking, (unless the recipe states otherwise)
Finishing Salts I refer to these as fancy salts. Think of them as a party dress you would wear for a special night. Where with the addition of earings and perfume your party ready.
